This is the recipe awaiting guests when the city's new gastro hotspot, SUKAIBA Copenhagen, opens today on the top floor of the Danish design hotel AC Hotel Bella Sky. Sky-high ambitions - without losing touch on reality
Today, Copenhagen's latest offshoot from the "gastro tree", SUKAIBA Copenhagen, opens its doors to the public, and given its sky-high ambitions for culinary and guest experiences, there's plenty to look forward to.

 

"SUKAIBA Copenhagen will be a study in sublime food, creativity in the kitchen, wonderful wine (and sake), and innovative cocktails. We've unleashed our culinary 'nerdiness' up here on all fronts, approaching both the kitchen and the bar as our personal playground, where we can pick out Japanese food traditions and combine them with the highest quality local ingredients in ways that we find meaningful," says the restaurant's culinary driving force, Executive Head Chef Martin Nilsson-Møller, who continues:

 

"We'll be grilling lots different foods on the robata - a traditional Japanese grill - and we'll be operating in the rare air of gastronomy without losing touch on reality and thus, we have created a refined and balanced menu with a wide appeal and competitive prices."

 

The menu, please
SUKAIBA Copenhagen's culinary offerings include lunch and dinner. The lunch options include a five-course "SUKAIBA Copenhagen Bento Box". In addition, guests can choose from an à la carte menu for lunch and dinner alike and making room for both light meals and more 'all-round' food experiences.

 

The evening menu tempts guests with "the full experience" in the form of an 8- or 16-course "SUKAIBA Kamikaze" menu, or dishes such as classic tempura and robata, where meat and fish are grilled on the traditional Japanese charcoal grill. And on evenings when guests are looking to go all-in, the menu also offers Baerii, White Sturgeon caviar and other delicacies, including a delectable dessert menu.

 

Martin Nilsson-Møller and co. will also be regularly inventing new dishes based on Japanese food culture and masterfully served on beautiful, handmade ceramics.

 

If "tiny yet tasty" is up your alley, look no further than the SUKAIBA snack menu - accompanied, perhaps, by a refined "Geisha" cocktail, our very own SUKAIBA gin, locally-brewed SUKAIBA Copenhagen beer with a twist of lemongrass, fine sake or excellent wines.

 

SUKAIBA Copenhagen is also a new frontier for cocktail aficionados. In addition to a sublime dining experience, guests can drop by the establishment's custom-designed bar and lounge to enjoy delicious drinks and, of course, the stunning view - in a relaxed atmosphere, and with DJs spinning international and local tunes at the weekends.

 

The masterminds
The young Danish chef Martin Nilsson-Møller heads a team that has already garnered much acclaim for their culinary dishes prepared over an open fire at BASALT, a restaurant also located at the AC Hotel Bella Sky. At his side, the executive head chef is joined by seasoned restaurant manager Juuso Hakanen and a new team of experienced and friendly waiters who look forward to welcoming guests.

 

New setting - new possibilities - great ambitions
Allan L. Agerholm, CEO of BC Hospitality Group, which owns SUKAIBA Copenhagen, speaks about the motivation for launching a brand new restaurant and bar experience at one of the Group's international hotels:

The decor of SUKAIBA Copenhagen features a daring mix of international and Danish brands, keeping within a carefully crafted colour palette that merges warm Japanese hues with cool Nordic shades in an international blend.

 

The unique location of the restaurant, with views over Copenhagen, Amager Common, and Sweden, has been fully incorporated into its design - even in the attractively appointed unisex toilets. For those with a taste for the finer things in life, SUKAIBA Copenhagen also offers its very own Cigar Lounge, with a selection of delicate cigars, air extraction built into the SUKAIBA ashtrays, classic board games, and a telescope to gaze upon the city and nighttime sky, of course.
